I'd say some sort of OBD2-reader like an MPGuino or maybe a bluetooth ELM327 adapter would be the easiest and most readily available way to get that data.

As far as I know they are just for windshield installation. Make sure to seal the hole really well or your scuttle panel will rust.

A little bit of an update; I was able to give the connector a good ol' wiggle with a pair of screwdrivers and it seems to have shifted my running issues from cold to hot. I suppose that is leading me in the right direction and I have asked a local garage for a quote on replacing the sensor.
