Firstly you would need an OBD scanner tool that could read live data on a k11, perhaps borrow from a friend. Then you need to check what the car is doing in open loop which you need to do on a stone cold engine... It will tell you what the engine is compensating for, for example, if it's sucking...

It is worth noting why the head is being removed. Head gasket issues, serious overheating, general overhaul etc.

The cooling system is pressurised if you remove the coolant overflow cap or the radiator cap during engine operation is normal for coolant to spill over... if there is no coolant in the oil and no exhaust gas in the coolant or any mixture of any of these I struggle to see how you have a head...

Whenever your engine is idling oddly always look for a vacuum leak. This can throw a mad code. If you had the maf diagnosed and replaced the issue persisted the diagnosis was not correct !!

Head gaskets in micras are a piece of cake but the amount of work required is an unknown quantity until it's all apart and you can assess the extent of the damage and repair..... Also worth identifying WHY the head gasket went... don't just throw parts at it

If the 02 sensor is behaving I'd look for a vacuum leak after the MAF with a stone cold engine... I had something similar on my k11 1.0 coil pack facelift and mine was a vacuum leak. Micras are quite simple so the issues are usually also simple in nature. Car not throwing any dash lights...
